The food materials which are prepared with the help of oil and fat when they are kept for a long time react with oxygen and their smell and taste become unpleasant.

This process happened due to the oxidation of fats and oil in the presence of oxygen.

While nitrogen is unreactive gas it doesn't react with oil and fats and it prevents food(chips, kurkure etc.) from getting rancid.

Therefore chips are packed with nitrogen gas.
